To face these days with flavour, tradition and a touch of sophistication, our ambassador Juan Pinel, chef at L’Àtic Restaurant, has reinterpreted one of the great Christmas classics. The result is a revitalising version, perfect both as a starter for Christmas Day and to restore energy between celebrations.

Recipe: Galets soup with quail and basil

Ingredients

  • Fresh basil
  • Olive oil, salt and pepper
  • Broth from Ramaders Agrupats

Preparation

First, prepare the galets. Heat a good chicken broth, or vegetable broth if you prefer a milder flavour, and cook the galets in it. At Ramaders Agrupats, the galets are already filled with a pork meat mixture, which adds a delicious intensity to the broth.

Meanwhile, debone the quail, separating the legs and the breasts. Season with salt and pepper and place in a very hot pan. The goal is to seal it quickly to retain its juices. A good sign is when small bubbles appear on the skin, indicating it is crispy and ready.

Once sealed, transfer the quail to the oven for one and a half to two minutes at 180 °C, allowing it to finish cooking without losing juiciness.

To serve, place a few fresh basil leaves in the plate. Then pour the hot broth with the galets over them. The heat will release the fresh aroma of the basil, creating a spectacular contrast.
