Chicken is one of the most consumed foods in the world, but not all chickens are the same. Felanitx free-range chicken is raised slowly, with quality feed and a flavour that brings back the taste of traditional countryside cooking. Although chicken is now considered an everyday food, its history dates back thousands of years. The first domesticated birds appeared in Asia, especially in India and Southeast Asia, more than 4,000 years ago. From there, they spread to Egypt, Greece and later across Europe. Over time, chicken became one of the most valued meats thanks to its versatility and full use in cooking.
There are different types of chicken available on the market:
- Free-range chicken: raised with more space and slower growth.
- Poussin: small, young and very tender.
- Farm chicken: the most common for everyday cooking.
- Poularde: young hen raised for delicate meat.
- Capon: castrated and fattened male, traditional for celebrations.
- Hen: firmer meat, excellent for broths and stocks.
Almost every part of the chicken can be used: breasts, thighs, wings, carcasses for broth, as well as liver, heart and gizzards. It is also a lean meat rich in high-quality protein and B vitamins.

Recipe: Chicken skewers with Mallorcan spices
Ingredients
- 1 kg Felanitx chicken
- 1 teaspoon tap de cortí paprika
- 1 teaspoon dried fennel
- 1 teaspoon thyme
- ½ teaspoon chopped rosemary
- 2 grated garlic cloves
- Lemon zest
- Extra virgin olive oil
- Salt and black pepper
Preparation
- Mix the spices with olive oil, grated garlic and lemon zest.
- Add the diced chicken and marinate for 2 to 4 hours.
- Thread the chicken onto skewers.
- Cook on a barbecue, grill or in the oven until golden outside and juicy inside.
- Serve with seasonal vegetables or Mallorcan potatoes.
