Five marinade recipes for different types of meat

What ingredients to use to marinate beef, chicken and poultry

Good meat does not need much to taste great. However, a good marinade can completely change the result: it adds flavour and aroma and, depending on the ingredients and resting time, can help achieve a more pleasant and juicy texture.

Marinades have been used for a long time as a way of preparing and preserving certain foods. Today, with refrigeration systems readily available, their main purpose in the kitchen is to give meat a different flavour before cooking. But what goes into a marinade? There is no single recipe: you can combine oil, spices, herbs, garlic, onion, citrus fruits, vinegar or wine, adapting the quantities and ingredients to the type of meat and each person’s taste.

Marinade for red meat

A marinade that works particularly well with meat that will later be cooked on the grill, over charcoal or in the oven.

Ingredients:

Oregano, 1/2 red pepper, 1/2 onion, 3 garlic cloves, olive oil, vinegar, water and salt.

Preparation:

Finely chop the pepper, onion and garlic cloves. Add the oregano, a pinch of salt, olive oil, a little vinegar and water. Mix all the ingredients and leave to rest for 10 minutes so the flavours can blend. It is best to use a brush to coat the entire surface evenly.

Marinade for chops

Ingredients:

2 garlic cloves, juice of 2 lemons, 200 ml olive oil, curry, sweet paprika, black pepper and salt.

Preparation:

Crush the garlic cloves and gradually add the olive oil. Add the lemon juice, curry, paprika, black pepper and salt to taste. Coat the chops with the mixture and leave to rest in the refrigerator for 1 hour before cooking.

Spicy marinade for those who like it hot

Ingredients:

1 garlic clove, 1 onion, 1 teaspoon sweet paprika, 2 teaspoons cayenne pepper, oregano, salt, black pepper, 1/2 glass of white wine and 2 tablespoons vinegar.

Preparation:

Chop the onion and garlic. In a bowl, mix the sweet paprika, cayenne pepper, oregano, black pepper and salt. Add the white wine and vinegar and mix well. Add the onion and garlic and leave to rest for 5 to 10 minutes.

Creole marinade for poultry

Ingredients:

3 garlic cloves, 1 bay leaf, 1 tablespoon oregano, 1 teaspoon sweet paprika, 1/2 teaspoon ground chilli, 1 tablespoon salt, black pepper, 100 ml olive oil and 20 ml wine vinegar.

Preparation:

Chop the garlic and crush the bay leaf. Mix with the oregano, paprika, chilli, salt and pepper. Add the oil and vinegar and stir well. Coat the meat and leave to rest for at least 2 hours.

Spicy marinade for chicken

Ingredients:

3 tablespoons oregano, 3 tablespoons sweet paprika, 1 tablespoon basil, 1 tablespoon thyme, 1 tablespoon hot paprika, chopped chilli, salt, juice of 1 lemon and olive oil.

Preparation:

Mix the oregano, sweet and hot paprika, basil, thyme, chilli and salt. Add the lemon juice and oil gradually until you obtain a thick paste. Coat the chicken with the paste, making sure to cover the entire surface. Leave to rest for between 30 minutes and 2 hours before cooking.
