As a family-run company with over three decades of experience, we have made total traceability not just a legal obligation, but our defining hallmark.
Traceability begins long before the animal reaches our facilities. We work with local farmers who share our philosophy of responsible breeding. Every animal we process has a complete record: we know the farm where it was born, what it was fed, what veterinary care it received, and under what conditions it lived. This information is meticulously recorded in our management systems and follows the product all the way to the final consumer.
Our facilities meet all European quality control standards — but we go further. We conduct additional voluntary tests, maintain real-time records of temperature and humidity, and document every step of the production process. Each batch of sobrasada, each piece of fresh meat, carries a code that allows it to be traced back to its original farm. Our product labels include much more information than legally required: the farmer’s name, production date, curing time for cured meats, and even storage and serving suggestions. We believe consumers have the right to know the full story behind what they buy. When you know every stage of the process, work with trusted suppliers, and document everything carefully, the result is invariably superior.
