Recipe of “arròs ramader”
Ingredients
- 170 g onion quartered
- 2 cloves of garlic
- 70 g olive oil
- 2 pinches of saffron threads
- 350 g of lamb shank (low cut lamb) in pieces
- ½ teaspoon of yellow food coloring (optional)
- 1 teaspoon of paprika
- 50 g of white wine
- 1000 g of vegetable broth
- 1 teaspoon salt
- 130 g of clean borage (in 4 cm pieces)
- 300 g of round grain rice

- Calories: 1587 kJ / 380 kcal
- Protein: 10.02 g
- Carbohydrates: 41.08 g
- Grease: 19.46 g-Fiber: 1.71 g
If you have a thermomix, these are the steps to follow:
- Put the onion, garlic, oil and saffron in the glass. Chop 2 sec / speed 5 and sauté 8 min / 120°C/spd.
- Add the lamb, the coloring and the paprika. Stir 10 min/120°C//spd.
- Add the wine and, without putting the beaker, program 1 min/Varoma//spd.
- Add the broth and salt and program 12 min/100°C//spd.
- Add the borage and rice and program 13 min/100°C//spd. Pour the rice into a clay bowl, let it rest for 5 minutes and you are ready to serve.
“Aguiat Ramader” recipe
Ingredients
- 120 g onion, chopped
- 2 cloves of garlic
- 150 g green bell pepper, cut into pieces
- 50 g of extra virgin olive oil
- 600 g chunky lamb shank
- 500 g potato chips, chopped
- 1 teaspoon salt
- 2 – 3 pinches of ground black pepper
- 1 dried bay leaf
- 900 g of water
- 2 clean fresh artichokes in quarters (approx. 150 g) (optional) or 150 g of frozen artichoke hearts (optional)
- 150 g of fresh sausage from Aragon in pieces or 150 g of fresh white sausage in pieces
- 50 g of round grain rice
Nutritional information (for 1 portion)
- Calories: 1797 kJ / 430 kcal
- Protein: 24.4 g
- Carbohydrates: 18.1 g
- Grease. 28.9 g
- Fiber. 4.7 g
If you have a thermomix, these are the steps to follow:
- Put the onion, garlic, green pepper and oil in the glass. Chop 5 sec/spd 4 and sauté 10 min/120°C/spd.
- Add the lamb meat and sauté 4 min/120°C//spd.
- Add 100 g of potatoes, salt, pepper, bay leaf and water and program 10 min/100°C//spd.
- Place the Varoma container in its position with the artichokes, 400 g of potatoes and the sausage. Cover and program 25 min/Varoma//spd.
- Remove the Varoma and add the rice to the glass. Put the Varoma back in its position and program 15 min/Varoma//spd. Put the potatoes, the sausage and the artichokes in a tureen and pour over the contents of the glass. Stir and serve immediately.
