Product description: Brossat, or brull (“cottage cheese”), is a lactic derivative that is made with the whey resulting from obtaining other cheeses such as fresh cheese or mature cheese. It is obtained by heating the whey to almost boiling temperatures (it never comes to a boil), at which point insoluble milk proteins and other particles that they will carry away precipitate and can be collected as white flocs on the whey surface. It is not pressed, salted or matured
