From black pig to the table: the red jewel of Mallorca<\/strong><\/h2>\n

If there is one product that represents Mallorca around the world, it is undoubtedly sobrasada. For those of us who\u2019ve had our hands in the mix \u2014or rather, in the meat\u2014 for decades, this sausage is much more than food: it\u2019s part of our family history and island identity.<\/p>\n

Sobrasada\u2019s origins go back several centuries. While some documents mention its presence on the island as early as the 16th century, it was in the 18th and 19th centuries that it became the star product of traditional pig slaughter season. What started as a way to preserve meat in times without refrigeration became a true gastronomic art.<\/p>\n

At Ramaders Agrupats, we continue making sobrasada just like our grandparents did. We select the best pigs \u2014preferably the native black Mallorcan breed whenever possible\u2014 and carefully choose the finest and fattiest cuts to guarantee that unmistakable flavour. The mix of minced meat with paprika \u2014which gives it its characteristic red colour\u2014 and spices is almost a ritual passed down from generation to generation.<\/p>\n

A real sobrasada from Mallorca must have just the right amount of fat to make it spreadable as it cures, but not too much. The perfect balance between meat, salt, paprika, and curing time defines its final quality. And although industrial versions exist, we can assure you as producers that the artisanal kind has that unique irregularity and personality that makes it truly special.<\/p>\n

The most traditional way to enjoy it is still the classic pa amb oli amb sobrasada<\/em>, where the heat from freshly toasted bread melts it slightly, releasing all its aromas. A simple bite that hides a whole world of flavour and tradition.<\/p>\n
